When cooking potatoes in an open fire, I’ve always wrapped the potatoes with aluminum foil at least twice and placed them in the coals of the fire.
Once, while on a camping trip, I was low on aluminum foil so I decided to lightly wrap my potatoes with the foil and placed them in my dutch oven over the fire. I done this just to save on the foil as well as not to have the ashy mess on the outside layer of the foil. As it turned out, those were the best baked potatoes I have ever had. There was just something about placing them in that cast iron dutch oven. It seemed to have trapped more of the flavor in the potato. Needless to say, I haven’t double wrapped my potatoes and placed them in the coals of the fire since then.

- aluminum foil

Place a cooking grate over open fire. Lightly wrap potatoes with aluminum foil and place in cast iron dutch oven with lid. Place the dutch oven on the cooking grate and cook for about 45 minutes to 1 hour, or just until a fork pierces easily into the potatoes.
I cooked my potatoes for about 30 minutes before adding the steaks to the cooking grate and finally added my shrimp just before the steaks were complete.
